For several years in the early and mid-2010s, supermarket foodservice (or deli prepared foods) was the fastest-growing segment in all of foodservice, with annual growth rates regularly in the double digits. Around 2018, growth began to slow with consumers pushing back on such things as rising prices and a lack of authenticity in prepared food offerings. The consumer had already grown accustomed to more creative and authentic menu items in restaurants and indicated that supermarkets were not keeping pace.


That said, Technomic has projected that supermarket foodservice growth will outpace all restaurant segments and most noncommercial segments in 2024.
The Supermarket Foodservice Multi Client Study focuses on changes that have permeated the supermarket foodservice landscape, consumer perceptions and unmet needs, and recommended actions that will enable grocers and their leading suppliers to take advantage of opportunities on the horizon.

Questions you can answer:

  1. What is the historical, current and forecasted five-year growth for supermarket foodservice?
  2. What is the current size and composition of the supermarket foodservice market?
  3. What are the current supermarket business practices, product offerings, and attitudes and plans regarding foodservices, as well as needs and gaps?
  4. What is the projected growth rate for key foodservice categories over the next three years, and how might these trends differ between various supermarket tiers?
  5. What are consumers’ unmet needs, category and format preferences, as well as usage and perceptions of supermarket foodservice?

SCOPE

  • Hot and cold self-service bars (e.g., prepared entrees, salads and soup)
  • Sushi
  • Specialty service case (traditional deli meats and cheeses are not included)
  • Cafés or restaurants within the store
  • Dedicated stations or venues within the prepared foods area (these will vary by store - e.g., pizza, sandwich, stir fry, carvery, grill, etc.
  • Grab-and-go (e.g., “deli wall”, “pre-packs”, etc.).
